Ingredients

  • 15ml of olive oil
  • 1 red-skinned potato, peeled and cut into cubes
  • 1 carrot, chopped
  • 1 onion, chopped
  • 1 clove of garlic, minced
  • 946ml of chicken stock
  • 1kg of fresh or frozen corn
  • 8g – 12g of fresh parsley or thyme
  • Salt to taste
  • Pepper to taste
  • 2 limes, cut into quarters

Corn Soup Recipe

Directions

  • Heat the olive oil in a large pot over medium heat, add the cubed potatoes, chopped carrots and onion, then stir-fry for 6 to 7 minutes.
  • Add the minced garlic and cook until fragrant.
  • Add the chicken stock, stir, and bring it to a boil. Once it starts boiling, cover the pot with a lid and reduce the heat to let the soup simmer for 5 minutes.
  • Add 520g of corn to the pot and cook it for 10 to 15 minutes with the cover on.
  • Transfer the soup to a blender or an immersion blender and blend until smooth.
  • Transfer the soup back into the pot and add the remaining 480g of corn, fresh parsley or thyme, and salt and pepper to taste.
  • Serve immediately with lime wedges on the side.

How to Store Corn Soup

If you have some leftovers, you can store them in an airtight container in the refrigerator; they can keep for up to 1 week. Or, if you’d like to store them for longer, you can freeze them in an airtight container. Remember to store them in a large container as the soup will expand when frozen. To reheat the soup, thaw it overnight in the refrigerator or reheat it in the microwave or over medium heat on the stove.
