Ingredients
400g pork ribs
2 whole carrots, peeled and cut into large chunks
2 whole tomatoes, cut into wedges
2 whole potatoes, peeled and cut into large chunks
1 large onion, peeled and cut into wedges
1 whole sweet corn, cut into 3 or 4 parts
40g dried anchovies
60ml apple cider (optional)
2.5l boiling water
Salt and pepper to taste

Directions
First, add pork into a large pot filled with boiling water and boil for 5 minutes. Once done, remove the pork and set it aside.
Next, fill the second pot with boiling water. Add the boiled pork as well as the remaining ingredients—carrots, tomatoes, potatoes, onion, sweet corn, dried anchovies, and apple cider.
Cover the pot and let the soup simmer at medium-low heat for 40-45 minutes
Then, uncover the pot and season with salt and pepper.
Serve immediately and enjoy the soup with a plate of rice or simply have it as it is!
