Ingredients

  • 50g of almond flour
  • 100g of all-purpose flour
  • 40g of powdered sugar
  • ½ tsp of baking soda
  • ½ tsp of baking powder
  • ¼ tsp of salt
  • 75ml of vegetable oil
  • 1 egg yolk, beaten
  • Almond, chopped lengthwise (for garnishing)

  • Parchment paper
  • 1 fork
  • 1 pastry brush

Almond Cookies Recipe

Directions

  • Sift almond flour, all-purpose flour, powdered sugar, baking soda, baking powder, and salt in a bowl. Mix until well combined.
  • Pour in the oil and mix until it forms a dough.
  • Line the baking tray with parchment paper.
  • Preheat the oven to 180°C.
  • Scoop 15 grams of dough and shape it into a ball. Lay it on the parchment paper, and with a fork, press on it to create a criss-cross pattern.
  • With a pastry brush, apply a light layer of egg yolk wash over the top of the cookie dough.
  • Place almond pieces on top for garnishing. Repeat with the rest of the dough.
  • Bake them in the oven for 15 minutes.
  • Remove from the oven and set aside to cool. Once cool, store them in an airtight container and serve!
