Ingredients

  • 25 dried chillies
  • 2 lemongrass stalks
  • 2 candlenuts
  • 4 shallots, peeled and chopped
  • 2 garlic cloves, peeled and chopped
  • 1 3cm galangal
  • 10g dried shrimp paste
  • 1 3cm fresh turmeric
  • 4 tbsp oil
  • 1 ginger torch flower
  • 2 tbsp tamarind pulp
  • 500ml water
  • 3 tamarind peels
  • 3 Indian aubergines, chopped
  • 4 lady’s fingers, chopped
  • 1 tomato, chopped
  • Sugar to taste
  • Salt to taste
  • 200g fish
  • 4 kaffir lime leaves

Asam Pedas Recipe

Directions

  • Blend the dried chillies, lemongrass stalks, candlenuts, shallots, garlic cloves, galangal, dried shrimp paste and turmeric.
  • Fry the blended ingredients with oil in a saucepan. Once the oil separates from the ingredients, add the ginger torch flower. Continue to fry until fragrant.
  • Soak the tamarind pulp in a bowl of water for 10 minutes. Drain the tamarind pulp water through a sieve and add the pulp water and peels to the saucepan.
  • Boil the sauce on high heat. Add the chopped aubergines, lady’s fingers and tomatoes. Then, season with sugar and salt to taste.
  • Add the fish and simmer until the fish is cooked. Add the lime leaves into the curry.

Types of Fish

You can add your favourite fish to our asam pedas recipe. We recommend adding a stingray, as its soft flesh will absorb the curry, making it more flavourful. However, if you would like something with more meat, you can add white fish like red snapper or sea bass. If you want to try something unique, you can add salmon to our asam pedas recipe.
