Here is a pancake recipe made from just 3 ingredients: a ripe banana, eggs and a bit of healthy fat (coconut oil). The banana, when riped, is sufficient to sweeten this recipe that is also enjoyable for vegetarian eating habits and lactose-intolerant foodies. Anyway, it could be a good reason to secretly a small dose of marple sirup on the side of pancakes, right?

Ingredients


  • 2 large eggs
  • 1 ripe banana
  • 1 pack of whipping cream
  • coconut oil

Equipment

  • 1 bowl
  • 1 whisk or a fork
  • 1 frying pan
  • 1 ladle
  • 1 spatula

Directions

  • Beat the 2 eggs with the whisk in the bowl until combined.
  • Peel the banana and break it in several pieces in the bowl.
  • Mash the banana in the beaten eggs and mix until you get a unified creamy texture.
  • Heat the pan on medium heat and spread a teaspoon of coconut oil over the pan.
  • Take a ladle of the mixture and drop in the pan. It should sizzle immediately.
  • Cook for about 1 minute, you can maybe lift a corner to see if the bottom looks browned.
  • When the bottom looks browned, gently flip the pancake to heat the top with the spatula and let it cook for 1 minute.
  • Take the cooked pancake to a serving plate and repeat the instructions to cook the next pancakes.
  • Finally enjoy your pancakes, go banana and add any extra toppings (marple sirup, honey, jam, etc.) if wished.

One little note

If you feel the texture of the pancakes is not solid enough, you could still use oat flakes to help! To reward your efforts, you can add a bonus such as berries, dark melted chocolate or peanut butter to increase your pancakes pleasure!
