If you’re having a lazy night and just want a quick and simple meal for dinner, this brinjal recipe is for you. Brinjal and minced pork sautéed in a perfect blend of spices that pack flavour in each bite, you can just serve this over a bowl of plain steamed rice. It makes an excellent main or side, and either way, you’re guaranteed to love it.

Ingredients
2 Asian brinjals, cubed
½ tsp of salt
65g of minced pork
½ tbsp of Shaoxing wine
3 tbsp of cooking oil
2 green onions, white and green halves separated
1 tsp of ginger, minced
2 cloves of garlic, sliced
1 tbsp of light soy sauce
⅛ tsp of sugar
½ tsp of sesame oil

Directions
In a bowl of water, add the cubed brinjals and ¼ teaspoon of salt. Soak for 10 minutes.
In the meantime, combine minced pork, ¼ teaspoon of salt, and Shaoxing wine in another bowl. Mix until well incorporated and set aside.
In a pan over medium-high heat, add 2 tablespoons of oil.
Add in the soaked brinjals and fry until soft. Remove from the pan and set aside.
Toss in the marinated pork and stir-fry until brown. Remove from the pan and set aside.
Add another tablespoon of oil into the pan.
Add the white parts of the green onion, ginger, garlic, and stir-fry until fragrant.
Add back in the fried brinjals and stir-fried minced pork.
Season with sugar and pour in sesame oil. Mix until all ingredients are well combined.
Remove from heat and garnish with chopped green onions. Serve immediately.
