A classic in Singaporean cuisine, cereal prawn is a unique dish that combines prawns with an unconventional ingredient, Nestum. Ever since this dish has grown in popularity, companies have taken the liberty to create premade mixes that you can get your hands on in your local grocery stores. However, home-cooked versions remain undefeated, so here’s our cereal prawn recipe for you to recreate at home.

Ingredients

  • 1 egg
  • 1 tbsp of self-raising flour
  • 1 tbsp of cornflour
  • 50g of Nestum (original flavour)
  • 1 tbsp of milk powder
  • 1 tbsp of sugar
  • 1 tsp of chicken powder
  • Oil (for deep frying)
  • 9 pieces of large prawns
  • 30g of butter
  • 3 Thai Bird’s Eye chillies
  • 3 sprigs of curry leaves

Cereal Prawn Recipe

Directions

  • Add egg, self-raising flour, and cornflour in a bowl and combine until a batter forms. Set aside.
  • In another bowl, combine Nestum, milk powder, sugar, and chicken powder.
  • In a pot, add approximately 2 inches of oil.
  • Coat the prawns in the batter and gently place them in the oil. Fry until golden brown, then drain and set aside.
  • In a pan over medium heat, add butter.
  • Add the Thai Bird’s Eye chillies and curry leaves and sauté until fragrant.
  • Add in the deep-fried prawns and stir until well incorporated.
  • Add the Nestum seasoning and stir until all prawns are thoroughly coated.
  • Stir-fry until the Nestum turns golden brown.
  • Remove from heat and serve immediately.

Prepare Your Prawns

If you’re not the biggest fan of cooking this cereal prawn recipe with its shell intact, prepare your prawns in advance. Remove the shells and devein the prawn before cooking to enjoy it fully without having to peel it mid-eating.
