Ingredients

  • 8g of corn starch
  • 30ml of water
  • 104ml of peanut oil
  • 2 to 3 whole shallots (minced
  • 1 1/2 inches of ginger (grated
  • 6 medium garlic cloves (minced)
  • 4 Thai chillis (minced)
  • 2 mud crabs (around 400g each)
  • 500ml of chicken broth
  • 66g of tomato paste
  • 125g of sweet chilli sauce
  • Salt to taste
  • Sugar to taste
  • 1 large egg (beaten)
  • Scallions
  • Cilantro

Equipment

  • 1 large wok and cover or 1 Dutch oven
  • 1 whisk
  • 1 small bowl
  • 1 ladle

Chilli Crab Recipe

Directions

  • Whisk the corn starch and water in a small bowl, then set aside.
  • Heat the oil over medium heat in your large wok or Dutch oven.
  • Add in the shallots, ginger, garlic, and chilli.
  • Fry until fragrant for about a minute.
  • Then add the crabs and broth.
  • Increase the heat to bring it to a boil.
  • Loosely cover it and let it boil gently until the crabs turn red or for about 6 minutes.
  • Remove the cover and add in the tomato paste and sweet chilli sauce.
  • Stir and let it simmer for a minute.
  • Then season it with salt, sugar, or chilli sauce until your desired taste.
  • Add in the corn starch mixture and bring it to a boil.

How to Choose and Store your Crab.

Firstly, you’d want to choose crabs that are still alive. The more active and alert it is, the better! So, check for movements in their eyes and claws. Secondly, go for the ones with a hard and firm underbelly. A hard underbelly means that they’ve grown into their current shell for longer, so they’re meatier. When storing the crab before cooking, you’d want to keep it alive. One of the best ways is to keep it in the freezer. Placing it in a cold environment will immobilise the crab and put it to sleep.
