Ingredients

  • 400g of cold cooked white rice
  • 2 eggs
  • 23ml of cooking oil
  • 2 cloves of garlic, minced
  • 1 stalk of scallion, chopped
  • 5ml of light soy sauce
  • 2.5ml of sesame oil
  • A pinch of white pepper
  • Salt to taste

Egg Fried Rice Recipe

Directions

  • Break up the rice grains with a spoon to make them as loose as possible.
  • Lightly beat the eggs in a small bowl with a fork until the yolks and whites fully incorporate.
  • Heat the wok over high heat until smoke rises. Add 15ml of cooking oil, and swirl the oil around to coat the sides.
  • Pour in the egg mixture and stir once the egg begins to set. Scramble the eggs quickly with a spatula, break them into small pieces, transfer them to a small bowl, and set them aside.
  • Add the remaining 8ml of cooking oil and the minced garlic. Fry until fragrant.
  • Add the rice and stir continuously while breaking up any clumps with the spatula.
  • Add the cooked eggs and scallions into the wok and fry until everything is heated.
  • Add the light soy sauce, sesame oil, white pepper, and salt to taste. Stir the fried rice for 1 to 2 minutes and serve immediately.

Tips to Make Fluffy and Flavourful Egg Fried Rice

The recipe calls for cold and cooked white rice, essentially leftover rice! If you plan on making fried rice the next day, you can cook extra rice the day before and refrigerate it. Refrigerating the rice helps to dehydrate it, making it slightly drier than freshly cooked rice, which makes fried rice fluffy and light. Freshly cooked rice is moister and may create clumps that you’d like to avoid. Lastly, we recommend using jasmine or basmati rice as they’re fluffier and not as starchy as short-grain rice.
