3 large eggs
4 slices of white bread (we recommend Japanese sandwich bread – shokupan or regular milk bread)
Salted butter
For the seasoning
1g of sugar
1.5g of salt
A pinch of ground black pepper
10.2g of milk
40g of Japanese mayonnaise

Medium saucepan
A large bowl filled with ice water

Directions
The Filling
Place the eggs in the saucepan and add enough water to cover the eggs by an inch.
Bring it to a boil, and once boiling, cook for 10 minutes.
Simultaneously prepare your large bowl filled with ice water.
Once the eggs are cooked, move them to the large bowl to stop the cooking.4
Let the eggs cool for about 5 minutes, then peel the eggshells.
Cut the eggs in half to separate the egg whites and yolk into two bowls.
Then add the sugar, salt, ground black pepper, milk, and Japanese mayonnaise. Mix well until smooth and creamy.
Dice the egg whites into small pieces and fold them into the egg yolk mixture.
Taste and adjust to your level of desired sweetness/saltiness.
To Assemble
Prepare 2 slices of bread per serving. Spread salted butter on both slices, then spread the filling evenly on one slice.
Place the other slice on top with the buttered side down.
Then place the sandwich between two plates and press gently.
Set aside for 5 minutes.
Cut the crust off with your bread knife. (optional)
Then cut the sandwich in half.
