Enoki mushrooms are very versatile. You can add them into your dishes or eat them on their own; either way, you’re guaranteed deliciousness. Mild in flavour with both a crunchy and stringy texture, here’s our enoki mushroom recipe that’s perfect as a side dish or a quick snack when you’re hungry at any point of the day.

Ingredients

  • 300g enoki mushrooms
  • 1 tbsp cooking oil
  • 1 garlic, peeled and minced
  • 1 red chilli, minced
  • 2 tbsp light soy sauce
  • ½ tbsp oyster sauce
  • ½ tsp sugar
  • ½ stalk scallion, finely chopped

Enoki Mushroom Recipe

Directions

  • To prepare the enoki mushrooms, first, trim off the root section of the mushroom.
  • Gently separate it into bite-sized bundles.
  • In a bowl, add water and wash the enoki mushroom.
  • Drain and pat dry with the kitchen towel.
  • In a pan, heat the oil over medium heat.
  • Add in the minced garlic and chilli and fry until fragrant.
  • Add light soy sauce, oyster sauce, sugar, and mix together. Once cooked, set aside.
  • In a pot, add water and bring it to a boil.
  • Blanch the enoki mushrooms in two separate batches, cooking each batch for 1 minute.
  • Drain off the water and transfer to a serving plate.
  • Pour the sauce over the cooked enoki mushrooms, garnish with the chopped scallions and serve.

Vegan alternative

What’s great about this enoki mushroom recipe is that it can be easily made to suit vegans and vegetarians. All you’ll need to do is replace the regular oyster sauce with vegetarian oyster sauce, also known as the mushroom vegetarian stir-fry sauce. Voila! You’ve got a dish that can be served for all.
