Fishball Noodles Recipe

You can easily find fishball noodles at your local kopitiam, but nothing beats a homecooked meal. The process may sound long and strenuous, but it’ll feel like a breeze with this recipe. Not to mention, when you’re savouring each bite of it, you’ll realise that it’s worth it.

Ingredients

  • 300g of dried egg noodles
  • 2 large handfuls of beansprouts
  • 8 fishballs

For Marinated Mince Meat

  • 200g of mince meat of your choice (pork, chicken, beef, or turkey)
  • 10ml of light soy sauce
  • 0.6g of ground white pepper
  • 3g of cornflour
  • 5ml of sesame oil

For Marinated Meat Slices

  • 120g of thinly sliced pork or chicken
  • 5ml of light soy sauce
  • A pinch of ground white pepper

For Marinated Liver (optional)

  • 120g of thinly sliced liver
  • 6g of light soy sauce
  • A pinch of ground white pepper

For Soup

  • 1.5 litres of water
  • 1kg of pork or chicken bones
  • 2 scallions
  • 10 black peppercorns
  • 1 star anise petal
  • 11.4g of salt
  • 1 handful of dried anchovies

For Stewed Mushrooms

  • 60g of dried shiitake mushroom
  • 500ml of hot water
  • 30ml of dark soy sauce
  • 15ml of fish sauce
  • 5ml of Chinese black vinegar
  • 4g of sugar

For Sauce

  • 20g of sambal
  • 15g of fried lard (optional)
  • 5ml of light soy sauce
  • 5ml of fish sauce
  • 30ml of the stewed mushroom liquid
  • 5ml of Chinese black vinegar
  • 30ml of hot soup

For Garnish

  • Lettuce leaves (optional)
  • Scallions
  • Fried lard
  • Fried shallots

  • 1 Chinese skimmer or heatproof sieve
  • 4 small bowls
  • 4 large bowls
  • 2 saucepans

Fishball Noodles Recipe

Directions

The Night Before

  • Soak mushrooms in a large bowl with hot water.
  • Let it cool to room temperature, then cover with cling wrap and store it in the fridge overnight.
  • Marinate your mince meat in light soy sauce, ground white pepper, cornflour, and sesame oil. Your meat slices and liver in light soy sauce and ground white pepper. Do so in separate bowls.
  • Then cover each bowl with cling wrap and store it in the fridge overnight.

On the Day

Soup

  • Pour water into a large saucepan add the meat bones, scallions, black peppercorns, the star anise petal, and salt.
  • Bring it to a boil.
  • Then lower the heat immediately and let it simmer for an hour.
  • Remove any scum that surfaces.
  • Add the dried anchovies before reaching an hour, then stir and simmer for 15 minutes.
  • Strain the soup into another saucepan, then let it simmer at low heat until ready to serve.

Mushrooms

  • Pour the mushrooms and their liquid into a saucepan.
  • Add in the dark soy sauce, fish sauce, and Chinese black vinegar.
  • Bring it to a boil.
  • Then lower the heat immediately and let it simmer for an hour.
  • Then place it into a bowl without any sediments.

Everything else

  • Boil a saucepan of water and cook the dried egg noodles for around 4 minutes. Check the packet instruction as each brand may differ.
  • Next, drain and set aside the noodles.
  • Repeat the same process with the beansprout, but only cook for 30 seconds.
  • Prepare four bowls.
  • Divide the mince meat, meat slices, and liver, then pour a ladle of soup.
  • Stir it slightly and set it aside.
  • Make the sauce with the sambal, fried lard (optional), light soy sauce, fish sauce, stewed mushroom liquid, Chinese black vinegar, and hot soup.
  • Divide the noodles and beansprouts into four bowls, then add the sauce.
  • Stir well.
  • Place the meat and fishballs into the soup.
  • Then place individual portions of mince meat, meat slice, and liver into a skimmer or sieve, lower it into the soup and cook for one minute.
  • Stir the mincemeat to break it up.
  • After it is cooked, top it onto the noodles.
  • Repeat the same process for the other three bowls.
  • Then divide the fishballs and stewed mushrooms equally.
  • Add a ladle of soup (optional).
  • Garnish with fried lard, fried shallots, scallions, and lettuce leaves.
