Our Hokkien mee recipe transports you to any hawker centre in Singapore. Not to be confused with Malaysia's Hokkien mee, Singapore's Hokkien mee consists of a combination of egg and bee hoon noodles, braised in rich prawn broth and served semi-dry with prawns, squid and chives. Amazingly fragrant and flavorful, this dish is perfect for breakfast and lunch and is delicious with a slice of lime or sambal for that extra kick.

Ingredients
3 cloves garlic, minced
4 tbsp cooking oil, divided
500g large shrimp, shelled and deveined, keep the shells for stock
200g squid
4 eggs, beaten
300g thick bee hoon
300g yellow noodles
200g bean sprouts
100g Chinese chives cut into 2-inch length
Fish sauce to taste
For the shrimp stock:
2 garlic cloves, minced
1 tbsp cooking oil
Shrimp shells
1 tbsp fish sauce
1 tbsp brown sugar
710ml chicken stock

1 large pot
1 strainer
1 large wok
1 ladle
Directions
Prepare the shrimp stock:
Fry the minced garlic in oil until lightly brown in a large pot. Add the shrimp shells and stir fry until they turn pink.
Add fish sauce, brown sugar and chicken stock. Boil on low heat for 30 minutes.
Strain and discard all the solids from the broth. Add more fish sauce if necessary.
Stir-frying the noodles:
In a wok, fry minced garlic in 2 tablespoons of oil until lightly brown. Add the shrimp and squid and fry until cooked. Remove the shrimp and squid from the wok and set them aside.
Heat the remaining oil in the same wok and add the beaten eggs. Break the eggs into smaller pieces and push them aside in the wok.
Add the bee hoon and yellow noodles, 3 ladles of shrimp stock and fry for 3 minutes.
Add the bean sprouts and chives. Stir. Add the cooked shrimps and squid and the remaining prawn stock.
Add more fish sauce if necessary. Cook until the stock is absorbed by the noodles.
Serve with sambal chilli.
