Ingredients
350g of boneless skinless chicken thighs
1 tbsp of soy sauce
½ tsp of sugar
¼ tsp of ground white pepper
1 tsp of cooking wine
1 tsp of cornstarch
400g of pumpkin cut into cubes
2 tbsp of dried shrimps
8 large dried shiitake mushrooms
3 tbsp of cooking oil
5 garlic cloves, finely minced
500g of long-grain white rice
1 tbsp of oyster sauce
1 tbsp of soy sauce
1 tsp of dark soy sauce
½ tsp of sugar
¼ tsp of ground white pepper
Salt to taste
600ml of liquid from soaking the mushrooms (top up with water if needed)

1 large skillet
1 rice cooker
Directions
Marinade the chicken:
Cut the chicken into bite-size pieces and transfer to a bowl. Then, add soy sauce, sugar, ground white pepper, cooking wine, and cornstarch. Toss to combine and set aside to marinate.
Prepping:
Next, soak the dried shrimps and dried shiitake mushrooms in warm water, in separate bowls. Once they’re softened, drain the ingredients and set them aside. Make sure to save some of the liquid from soaking the mushrooms.
Finely chop the dried shrimp and cut the shiitake into slices.
Cooking:
Add oil and saute the garlic in a large skillet. Then, add the dried shrimps and shiitake mushrooms and saute.
Add the chicken pieces and saute until they are almost cooked. Add the rice, oyster sauce, soy sauce, dark soy sauce, sugar, white pepper, and salt. Toss to make sure everything is well-combined.
Turn off the heat and transfer everything into the rice cooker. Pour in the mushroom liquid and add water if necessary. Add the pumpkin cubes and press “cook”.
Once done, serve warm and enjoy!
