Ingredients

  • 50g of onion, sliced thinly
  • 25g of carrots, cut into small pieces
  • 500g of potato, peeled and cut into small cubes
  • 42g of kewpie mayonnaise
  • 15ml of milk
  • 25g of cucumber, slice thinly
  • 50g of ham, cut into small pieces
  • Salt to taste
  • Pepper to taste

  • Cling wrap

  • 1 small pot
  • 1 small bowl

Japanese Potato Salad Recipe

Directions

  • Place the thinly sliced onions on a plate, and wrap it with cling wrap. Microwave it for 2 minutes, and set aside.
  • Do the same for the carrots.
  • Boil the potato cubes in a small pot for 10 minutes and strain them once they’re cooked. Note: poke the potatoes with a skewer. If the skewer goes through, then they’re cooked.
  • Lightly mash the potatoes, leaving some potato cubes in shape.
  • Mix the mayonnaise and milk in a small bowl.
  • Combine the lightly mashed potatoes, carrots, cucumbers, ham, and mayonnaise mixture in a large bowl and mix.
  • Season it with salt and pepper to taste.

Pointers for Japanese Potato Salad

To create the desired creamy texture, remember to mash your potato cubes while they’re hot. It’ll make a mochi-like texture if you mash them when they’re cold. Also, add the mayonnaise mixture once the mashed potatoes have cooled down. The mayonnaise mixture can incorporate better with the mashed potatoes, preventing the mayonnaise from splitting. If you’d like to add or substitute ingredients, you’re welcome to add raisins, green peas, or sliced boiled eggs.
