Lu Rou Fan Recipe

Lu rou fan is a very popular Taiwanese meal. It’s affordable and delicious, and you can never go wrong with it. Also known as braised pork rice, lu rou fan is comfort food to many in Taiwan and globally in many Chinese households. Served with plain steamed rice and a side of soft-boiled eggs, here’s our lu rou fan recipe that you can try out at home.

Ingredients

  • 450g skin-on pork belly, cut into 1-inch cubes
  • 2 tsp cooking oil
  • 25g granulated sugar
  • 1 shallot, diced
  • 8 shiitake mushrooms, diced
  • 60ml Shaoxing wine
  • 3 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 475ml water
  • 3 star anise
  • 1 cinnamon stick
  • 6 cloves
  • 3 bay leaves
  • 2 tsp Sichuan peppercorns
  • 2 pieces dried tangerine peels
  • 2 slices ginger

  • 1 wok, or large frying pan

  • 1 cheesecloth

Lu Rou Fan Recipe

Directions

  • In the pot, add water and bring it to a boil.
  • Toss in the pork belly and let it blanch for 1 minute.
  • Drain the water, rinse the pork and set aside.
  • In the wok, heat cooking oil over low heat.
  • Add the sugar and let it caramelise before adding in the shallots.
  • Turn the heat up to medium and stir fry the shallots.
  • Add the shiitake mushrooms and stir fry together.
  • Add the blanched pork belly, Shaoxing wine, light and dark soy sauce, and water. Stir and bring it to a boil.
  • In the meantime, add in the star anise, cinnamon stick, cloves, bay leaves, Sichuan peppercorns, dried tangerine peels and ginger in a cheesecloth and tie it up.
  • Once the mixture is boiling, throw in the cheesecloth filled with spices and turn the heat down to the lowest setting.
  • Let it simmer for 1 hour and 30 minutes, occasionally stirring in between.
  • Remove the spices, turn up the heat to medium-high and stir. Let the sauce thicken.
  • Once the sauce is thick and glossy, scoop out the braised pork belly over steamed white rice and serve.
