It is a common dish found in Malaysia and Singapore. Mee hoon kueh is easily recognisable for its unusual shape. Its dough only consists of flour, egg, water, vegetable oil, and salt.

Ingredients
For the dough:
1 egg
A pinch of salt
15ml of vegetable oil
300g of all-purpose flour
120ml of water
For the meat:
200g of ground pork
3g of salt
A pinch of pepper
15ml of sesame oil
5g of cornflour
For the soup:
15ml of cooking oil
3 cloves of garlic, minced
4 dried mushrooms, soaked and thinly sliced
1.5l of pork broth
A handful of spinach
2 eggs

Directions
Combine the egg, salt, oil, and flour in a large bowl.
Mix and gradually add water until it becomes a dough. Knead the dough, shape it into a ball, cover it with cling wrap, and set it aside for 1 hour.
Divide the dough into 4 to 6 portions as it’ll be easier to work with, and work with each dough one at a time. Also, cover the rest of the dough to prevent them from drying out.
Boil a pot of water and start tearing off small pieces of dough. Flatten the dough with your fingers and blanch them in boiling water.
Cook the mee hoon kueh for 1 minute, transfer them to a large bowl and set them aside.
Marinate the ground pork with salt, pepper, sesame oil, and cornflour in a large bowl and set aside.
Heat the oil in a pot over medium heat, add the minced garlic and mushrooms, and stir-fry until fragrant.
Add the pork broth and the marinated ground pork and bring it to a boil.
Add the blanched mee hoon kueh and spinach into the broth.
Once the spinach is cooked, crack the eggs into the soup.
Serve once the eggs are cooked.

Fry them in oil until they turn golden brown.
