This Mee Siam recipe is a must-try for those who love bold flavours. Spicy and tangy, this dish will definitely be your next breakfast staple. Compared to the Mee Siam Kuah (Mee Siam with gravy), this dry Mee Siam recipe uses fewer ingredients while still packing a punch of flavour.

Ingredients
200g of rice vermicelli, soaked in water
20g of dried shrimps, soaked in warm water
½ onion, chopped
2-3 cloves garlic
50g of dried chilli paste
2-3 tbsp of cooking oil
2 tbsp of salted soybeans, mashed
100g of prawns, peeled
100g of beef, thinly sliced
125ml of water
50g of bean sprouts
2-3 tofu puffs, cut into finger-lengths
Sugar and salt to taste
Handful of chives, cut into finger-lengths
Calamansi limes, cut into wedges

Directions
Preparing the noodles:
First, rehydrate the vermicelli noodles by soaking them in a bowl of warm water for 15 minutes. Once soft and pliable, drain the water and set the noodles aside.
Blending the base paste:
In a bowl, add the dried shrimps and pour warm water over them to soften.
Add the dried shrimps, chopped onion, garlic, and dried chilli paste to a blender with a bit of water. Blend to a paste.
Cooking Mee Siam:
In a pan, heat up the cooking oil and add the blended base paste. Stir fry until the paste is fragrant and has dried down.
Next, add the mashed salted soybeans and stir.
Add the prawns and beef. Once well-combined, add water, bean sprouts, tofu puffs, as well as sugar and salt to taste. Stir and let the sauce simmer to a boil.
Add the softened vermicelli noodles and toss thoroughly to evenly coat the noodles.
Serve immediately with a wedge of calamansi lime on the side.
