Ingredients

For crust

  • 225g rectangle graham crackers
  • 30g unsalted butter, melted

For filling

  • 5g unflavored powdered gelatin
  • 125ml cold water
  • 455g cream cheese, at room temperature
  • 375g powdered sugar
  • 20ml vanilla extract

Directions

For crust

  • Prep your pan with cooking spray.
  • Break the graham crackers into large pieces and process them into crumbs using a food processor.
  • Pour in the melted butter and continue to process the crumbs until they clump.
  • Once clump together, place the crumbs into the prepared pan.
  • With a spatula, flatten the buttery crumbs into a thick crust.

For filling

  • In a microwave-safe bowl, mix your gelatin with cold water. Stir and set aside for 5 minutes.
  • Next, microwave the gelatin for 30 seconds. Let cool.
  • To make the cheesecake base, dump the cream cheese in the bowl of a stand mixer.
  • Sift the powdered sugar and mix at low speed with the paddle attachment. Slowly increase the mixer speed to medium and continue to mix until fluffy.
  • Add the vanilla extract.
  • Then, switch the paddle to a whisk attachment. Gradually raise the speed until high and mix till soft peaks form.
  • Reduce the speed to medium and add warm gelatin (if your gelatin has started to gel, microwave it until liquidy before adding it in). Increase the mixer speed again and beat until firm peaks form.
  • Dump the filling into the pan and smooth the top with a spatula. Cover with plastic wrap.
  • Refrigerate for an hour or overnight.
