Ingredients

  • 2.3l water
  • 250g pork bones
  • 1 old cucumber, cut into 3-inch pieces with seeds removed
  • 4 red dates, seeds removed
  • 1 tbsp goji berries
  • 8 dried scallops

Equipment

  • 1 pot

Directions

  • Add 300ml water into the pot and bring to a boil.
  • Add in the sliced ginger and pork bones.
  • Once the water boils again, remove the pork bones.
  • Add 2l water, old cucumber, red dates, goji berries, and dried scallops.
  • Turn the heat up and bring it to a boil.
  • Finally, reduce the heat to low, cover the pot and let it simmer for 1 hour and 30 minutes.
  • Once it’s done, serve immediately.

Extra protein

You can add extra protein to this old cucumber soup recipe to make it more filling as a meal. Instead of using pork bones to add flavour to the broth, you can add pork ribs as another source of protein. Slowly cooked, the pork ribs will just melt in your mouth.
