Ingredients
30g of peach gum
1 large snow fungus
1.2l of water
10g of ginger, sliced
2 pandan leaves, knotted
30g of dried longan
30g of red dates
50g of rock sugar
5.6g of goji berries
Equipment
2 large bowls
1 tweezer
1 large pot with cover
Directions
To Prepare Peach Gum:
Soak the peach gum in water in a large bowl for 8 to 12 hours.
Use the tweezers to pick out the black specks, then rinse the peach gum.
To Prepare Snow Fungus:
Soak the snow fungus in water for 10 to 15 minutes in a large bowl. Remove its yellow and hard core, then cut the snow fungus into bite-size pieces.
Everything Else:
Pour the water into a large pot and bring it to a boil.
Add ginger slices, pandan leaves, dried longan, and red dates. Lower the heat, cover the pot and let it simmer for 15 minutes.
Next, add in the snow fungus and rock sugar. Cover the pot and let it cook for 15 minutes.
Lastly, add the peach gums and let them simmer for 10 minutes. Careful not to overcook to prevent them from melting into the soup.
Turn off the heat, add the goji berries and stir. The residual heat will soften the goji berries.
