Ingredients

  • 300g of soft unsalted butter
  • 15g of powdered sugar
  • 4 egg yolks
  • 1 egg white
  • 550g of all-purpose flour
  • A pinch of salt
  • 520g of pineapple stuffing
  • 30ml of water

  • 1 small bowl
  • 1 large bowl
  • 1 cooling rack
  • 1 whisk
  • 1 brush

Pineapple Tart Recipe

Directions

  • Add unsalted butter and powdered sugar into a large bowl and whisk well until they turn light in colour.
  • Add egg yolks and egg whites into the bowl and continue to mix well.2
  • Add sifted all-purpose flour and salt.
  • Knead with your fingers until a dough is formed and continue to knead for 30 to 60 seconds. Let the dough rest for at least 30 minutes.
  • Roll the pineapple stuffing into balls, 4 grams each.
  • After 30 minutes, divide the dough into 7 grams of small dough and roll it into a ball.
  • Preheat the oven to 180 degrees.
  • Wrap the pineapple filling in the dough ball. Roll out the outer skin into a ball, lightly press out a hole with your fingers, and put the pineapple filling in.
  • Close the shape and wrap the filling into a ball. Make sure the surface is smooth, and at the same time, there should be no leakage of the filling; otherwise, it will break.
  • Grease a baking sheet and arrange the dough balls on the baking sheet. Each interval should be about 1cm.
  • Beat egg yolks and add water into a small bowl, use a brush to dab the mixture on the surface of the dough balls.
  • Put them in the oven for 20 minutes.
  • Take the tarts out and brush with the egg wash again. Place back in the oven for another 4 to 5 minutes.
  • Cool for 5 to 10 minutes after baking, then serve on a plate. Enjoy!

Quick tip

If you want a good-looking pineapple tart, make sure the outer skin is not too thin because it may crack during the baking process.
