Ingredients

  • 80g of rice flour
  • 32g of cornflour
  • 4g of baking powder
  • 4g of sugar
  • 3g of salt
  • 355ml of ice-cold water
  • Cooking oil
  • 6 to 8 ripe bananas, peeled

Pisang Goreng Recipe

Directions

  • Mix the rice flour, cornflour, baking powder, sugar, and salt in a large bowl.
  • Add 1 tablespoon of ice-cold water into the dry ingredients. Continue to add 1 tablespoon of water while whisking until you get a pancake batter consistency.
  • Heat enough cooking oil in a frying pan or wok to submerge the bananas. Heat the oil to 162°C.
  • Thoroughly coat the bananas in the batter and deep-fry them in batches until they turn golden brown. Be careful not to overcrowd.
  • Remove the bananas with a skimmer and place them on paper towels.

Choosing Your Bananas

Use ripe bananas to make the best Pisang Goreng. However, the bananas should be firm as overly ripe bananas are too soft. Of course, you need to avoid green bananas too. On the other hand, you can replace bananas with plantain if you want a less-sweet alternative. Plantains contain less sugar and are commonly deep-fried in Caribbean cuisines. However, remember to use very ripe plantains since the green ones are not sweet. The darker its skin, the sweeter it’ll be, especially after it’s cooked. Plantains are starchier, so even overly ripe ones shouldn’t be too soft.
