You may have grown up disliking bitter gourd due to its bitterness, but we bet we can change your mind with this bitter gourd recipe. In our bitter gourd recipe, bitter gourd is stir-fried with salted egg yolk, giving it extra flavour and fragrance. Ingredients
400g of bitter gourd
6g of salt
2 salted eggs, separate egg white, and yolk, steamed and mashed
45ml of cooking oil
2g of chicken stock granules
8.5g of garlic, minced
1 stalk of spring onion, cut into 2cm long pieces
A pinch of white pepper
4g of sugar
50ml of water

1 spoon
2 large bowls
1 large sieve
1 steamer
1 small bowl
1 wok with lid
Directions
Slice the bitter gourd in half with a knife, and remove the centre filled with seeds with a spoon.
Slice the bitter gourd into thin slices, add it into a large bowl with salt, and mix well.
Set aside for 5 to 6 minutes, then thoroughly rinse with water several times to remove the residual salt. Drain with a large sieve and set aside.
Separate the salted egg yolks from their whites and steam the yolks in a steamer for 7 to 8 minutes. Mash the cooked egg yolks in a small bowl and set them aside.
Heat 15ml of cooking oil in a wok over medium heat and add the sliced bitter gourd and chicken stock granules. Stir-fry for 2 minutes and transfer it to another large bowl.
Heat the remaining 30ml of cooking oil, add the minced garlic and spring onion, and stir-fry until fragrant. Then add the mashed salted egg yolk and continue to stir-fry until fragrant.
Add white pepper, sugar, and water, stir well and bring it to a boil.
Once it boils, add the cooked bitter gourd, and stir.
Cover the wok with a lid and continue cooking the bitter gourd over medium heat until the sauce reduces and the bitter gourd is soft.
