Spaghetti Carbonara Recipe

Spaghetti Carbonara is a traditional Italian pasta dish and one of Rome’s four classic pasta, including the cacio e pepe, amatriciana and gricia. Carbonara was invented by Italian carbonari, or charcoal workers who prepared the dish on their shovels over a fire. It is a simple dish to prepare, and with a bit of practice, anyone can get it just right. Here is a spaghetti carbonara recipe for all pasta lovers out there.

Ingredients

  • 100g thick-cut bacon, diced
  • 2 garlic cloves, peeled and squashed
  • 3 eggs
  • 350g spaghetti
  • 50g pecorino cheese
  • 50g parmesan cheese
  • 1 tablespoon extra-virgin olive oil
  • Salt
  • Black pepper

Spaghetti Carbonara Recipe

Directions

  • Put a pot of salted water on to boil.
  • In a separate bowl, beat the eggs and mix in half of the cheese.
  • Once the water boils, add the spaghetti. When the water comes back to boil, reduce the heat and cook at a constant simmer, covered for around 10 minutes or until al dente (just cooked).
  • While the spaghetti is cooking, heat olive oil in a frying pan over medium heat and add diced bacon. Stir regularly and cook until crispy.
  • When the bacon is almost crisp, add garlic and cook for another minute. Once cooked, take the garlic out and discard it.
  • Keep the heat under the bacon on low.
  • When the spaghetti is ready, lift it from the water and transfer it into the frying pan with the bacon. Remember to save some of the pasta water (about half a cup).
  • Take the frying pan off the heat and pour the egg mixture into the frying pan. Use a pair of tongs to mix the spaghetti with the egg mixture until everything is coated and thickened, not scrambled.
  • Add the pasta water to keep it saucy but not too wet.
  • Serve on a plate and sprinkle with the remaining cheese and a grating of black pepper.

Quick Tips

The garlic is optional and not usually included in spaghetti carbonara. To make a halal spaghetti carbonara, you can replace the bacon with chicken bacon. It will still taste great!
