Ingredients

  • 1 live fish (such as flounder or sea bass), about 500g
  • 5cm ginger, peeled and finely cut into thin strips
  • 1 stalk scallion, cut into 5cm length and then into thin threads
  • 2 tbsp cooking oil
  • 1 tbsp rice wine
  • Cilantro leaves

Soy Sauce Mixture

  • 4 tbsp light soy sauce
  • 2 tbsp rice wine
  • 2 tbsp water
  • 1 tsp white pepper powder
  • 2 tbsp rock sugar, grind into powder form

  • 1 wok with cover
  • 1 small bowl
  • 1 plate
  • 1 steaming rack
  • 1 pan

Steamed Fish Recipe

Directions

  • Prep the fish by cleaning it thoroughly (remove gut, gills, scales, etc.) and pat dry.
  • Next, mix the soy sauce mixture in a bowl and set it aside.
  • Place the fish on the plate and drizzle rice wine on top. Add the cut ginger strips.
  • In a wok, bring enough water for steaming to a boil. Put the fish on the steamer rack, cover it, and let it steam for eight minutes over high heat.
  • Once done, take out the fish and remove the ginger strips.
  • Heat up the pan and add cooking oil. Then, pour the hot oil over the steamed fish.
  • Meanwhile, make the soy sauce by mixing all the ingredients stated in order.
  • Put the pan back over the heat, add the soy sauce mixture and stir well. Once the sauce bubbles up, pour the sauce over the fish.
  • Garnish the dish with some cilantro leaves and scallions.
  • Enjoy your steamed fish with rice.

Tips to Make the Best Steamed Fish Recipe

Always opt for fresh fish, preferably one that was just alive and swimming. Next, steam your fish for only 8-10 minutes (8 minutes for a smaller fish and 10 minutes for a bigger fish). Lastly, remember to use rock sugar as it offers a better overall taste.
