Ingredients
1 4cm ginger, thinly sliced
2 pieces codfish steak
2 tbsp soy sauce
8g sugar
2 tbsp water
2 tbsp Shao Xing wine
4 tbsp oil
5 cloves garlic, minced
A pinch of pepper
1 spring onion, sliced
Equipment
1 ceramic plate
1 saucepan
1 frying pan
Directions
On a ceramic plate, spread out the sliced ginger in a single layer.
Place the codfish on the ginger and place it in a steamer for 7 minutes.
Add in the soy sauce, sugar, water, and Shao Xing wine in a saucepan. Mix on low heat until the sugar melts.
Heat the oil and fry the minced garlic until golden brown in a frying pan. Set aside the fried garlic and oil to cool.
When the fish is ready, remove it from the steamer and pour away any liquid you find from the ceramic plate. Sprinkle pepper, drizzle garlic oil and fried garlic over the fish. Add the sliced spring onions as well.
Serve hot.
