2 eggs, free-range or organic
240ml water
Sesame oil to taste
1 stalk spring onions, thinly sliced

Directions
Crack the eggs into a bowl and add water and salt. Mix well with a fork and transfer to a steaming bowl.
With a spoon, remove the surface bubbles from the egg custard.
Add water to a steamer and boil on high heat. Once the water is bubbling, add the egg custard. Steam for 20 minutes.
After 20 minutes, remove the egg custard and drizzle the sesame oil on top. Garnish with spring onions and serve hot.
