Chinese Steamed Mussels Recipe

Ingredients
1.5kg mussels, beards removed and scrubbed
120ml water
3 tbsp butter or margarine
3 tbsp garlic cloves, chopped
1½ tbsp cracked or coarse-ground pepper
6 tbsp oyster sauce
Sourdough bread

1 wok
1 spatula
Directions
Boil the mussels and water in a saucepan over high heat. After 5 minutes, lower the heat and simmer until the mussels pop open. Set aside the mussel juice for later use.
Melt butter and fry the garlic and pepper in a wok until the garlic turns golden brown. Add oyster sauce and reserved mussel juice. Boil over high heat for 5 to 6 minutes.
Add the mussels into the wok and stir on high heat until well coated with sauce.
Serve with sourdough bread.
