Ingredients

Broth:

  • 540ml Dashi stock
  • 1 tbsp mirin
  • 1 tsp sugar
  • 1 tbsp usukuchi soy sauce
  • ½ tsp salt

Udon:

  • 180g dry udon noodles, or 2 servings
  • 4 seasoned fried tofu pouch
  • 1 stalk scallion, sliced
  • 4 slices narutomaki, thinly sliced

  • 1 saucepan
  • 1 large pot
  • 1 strainer

Udon Soup Recipe

Directions

  • In a saucepan, add the Dashi stock, mirin, sugar, usukuchi soy sauce, salt and bring to a boil.
  • Once the broth is boiling, turn the heat down to low and simmer.
  • In a large pot, add water and bring to a boil.
  • Add in the udon noodles and let it cook.
  • Once the noodles are cooked, use the strainer to drain the water.
  • Assemble your dish with the noodles, broth, and garnish with the seasoned fried tofu pouch, sliced scallion and narutomaki. Serve immediately.
