A staple in every Chinese household, you’ve most probably grown up having the watercress soup for dinners on the regular. It’s the perfect hearty broth that’ll complete your meals, and a plus point is it’s excellent for your health! For such a flavourful dish, you’d figure it would be difficult to make, but you couldn’t be more wrong. In this watercress soup recipe, toss everything into a pot to simmer, wait for 3 hours, and voila!

Ingredients
700g of pork ribs, cut into 2-inch pieces
1 ginger, sliced
3.5l of water
1 ¼ tsp of sea salt
½ tsp of white pepper
3 bunches of watercress, washed and stems trimmed

1 strainer
Directions
In a pot, bring 1.5 litres of water to a boil. Blanch the pork ribs for 2 minutes.
Turn off the heat and drain the water from the pot.
Wash the pork ribs under running water.
In another pot, add the blanched pork ribs, sliced ginger, and the remaining water.
Bring the broth to a boil, immediately turn the heat down to the lowest setting, and cover with the lid. Simmer for 90 minutes.
Season the broth with salt and white pepper, cover the pot with the lid and simmer for 30 minutes.
Stir the soup and skim off any floating particles or grease on the top with a strainer.
Add the watercress, cover the pot with the lid, and simmer once again for 30 minutes./span>
Serve immediately.
