Mostly eaten for dinner or supper, hor fun is a signature and must-have dish when you’re visiting Singapore. The variety of hor fun dishes are endless, but today we’ll share with you the classic hor fun recipe that you can make in your own kitchen.

Ingredients
Noodles:
2 tbsp cooking oil
400g flat rice noodles
1 tbsp light soy sauce
1 tbsp sweet soy sauce
Gravy:
2 cloves garlic, chopped
1 small ginger, sliced
120g chicken slices
2 tbsp oyster sauce
2 tbsp light soy sauce
3 bunches Chye Sim, cut into 6-cm pieces
800ml chicken stock
1 tsp sugar
¼ tsp salt
2 eggs9
2 tbsp cornstarch
3 tbsp water

1 pan
2 small bowls
1 whisk
Directions
In a pan over high heat, heat 1 tablespoon of oil and add in the rice noodles.
Add in the light and sweet soy sauce.
Let the rice noodles cook for a minute until slightly brown.
Take the rice noodles out and set them aside.
Add in the other 1 tablespoon of oil and add garlic and ginger.
Once the oil is fragrant, toss in the chicken with the oyster sauce and light soy sauce.
Add in the Chye Sim and stir.
Add in the chicken stock and bring it to a boil, adding sugar and salt.
In a small bowl, crack the eggs and whisk.
Slowly add the eggs into the mixture in the pan while gently stirring.
In another small bowl, mix the cornstarch and water to create a cornstarch flurry. Add into the pan.
Serve the stir-fried rice noodles on a plate and pour the finished gravy over it.
An extra kick: pickled green chillies
If you’d like to add an extra punch of flavour to your hor fun recipe, serve with pickled green chillies. All you need to do is soak chopped green chillies in hot water for five minutes, drain, then add white vinegar, sugar, and salt—a quick and easy way to elevate the dish.
